Starting with dinner makes practical sense. Queues build fast once a Sphere performance lets out, and you don’t want to burn your one free evening standing in one. Gordon Ramsay Burger at Planet Hollywood is close enough to the Strip that it doesn’t eat into your time, and it’s a proper meal rather than something rushed.
The restaurant seats around 200 guests and has a 30-foot fire feature at the centre of the room, which sounds gimmicky but apparently works. It is described as the only restaurant on the Strip that cooks its beef patties over an open flame fuelled by hardwoods. The Hell’s Kitchen Burger and the Truffle Burger come up most often in reviews, and the 24-Hour Burger with braised short rib is worth a look for something more substantial. Reviewers on OpenTable rate it 4.5 overall , with service and burger quality mentioned consistently.
The place is open from 10 AM to 1 AM daily, so timing is flexible, but CES week is busy across the whole Strip. Book a table rather than turning up and hoping. At least one reviewer found that having a reservation meant being seated promptly despite a packed room. Aim to sit down around 6:00 PM and be done by 7:30 PM, which leaves exactly the right amount of time for what comes next.
The Bellagio Fountains: Free and Worth Every Minute
Once you’re done with dinner, walk north along Las Vegas Boulevard. It takes around 15 to 20 minutes on foot, and the Strip is worth seeing at that hour when the lights are up. Head to the Bellagio and find a spot along the footpath on Las Vegas Boulevard.
The Fountains of Bellagio are entirely free to watch from the pavement, which still surprises people who haven’t been. Each performance runs three to five minutes depending on the musical selection, and the shows rotate through different songs and choreography, so two consecutive performances rarely look the same. From 7:00 PM onwards, shows run every 15 minutes until midnight , so you won’t miss it if you arrive slightly later than planned.
The timing matters more than people realise. The 8:00 PM to 9:30 PM window is the sweet spot : dark enough that the 5,000 lights in the water have full effect, early enough that the pavements haven’t hit peak crowd levels. Watch one show, and if a second starts 15 minutes later and you’ve got the time, stay for it. The choreography changes and it’s genuinely worth seeing twice.
After the fountains, the Sphere is roughly a mile away . Walk if you’ve got time and energy, or grab a rideshare if you’re cutting it close to your show time.
The Sphere
Whatever else you’re tempted to cut from an evening in Las Vegas, don’t cut this. At the time of writing, the resident show is The Wizard of Oz at Sphere. The show opened in August 2025 and is described by Sphere Entertainment as a fully immersive experience projected onto a 160,000 square-foot display covering nearly 360 degrees , with 4D effects bringing the environments to life. I watched it in January, and the wind and falling debris effects that kick in during key scenes are something no review or photo prepares you for. You feel it as much as see it.

Where to Sit
This matters more than people expect, because the Sphere is a dome and your seat angle changes how much of the wraparound visuals you actually catch. From my own experience in January, aim for the front of section 306. If that’s gone, 305 or 307 either side are the next best options, and section 206 is a solid fallback if the upper tier isn’t available. Anything further back or further round the sides starts losing the effect that makes the venue worth the ticket price.

What Is Not
None of this is cheap. Secondary market listings currently show Sphere tickets from around $98 to $166 per performance , and CES week demand is likely to push that higher. Many shows are already sold out with limited availability , which is why this piece keeps saying book early. Don’t treat it as something you can sort out when you arrive.
Gordon Ramsay Burger is not exceptional value for money. A few reviewers note that the bill can feel steep relative to the portion size, and that’s a fair point. What you get is a decent meal in a lively room, which is what you need before an evening show, not a bargain.
The Bellagio Fountains have a January-specific risk. High winds above 20 mph cancel the show instantly for safety . Las Vegas in early January can be colder and windier than people expect. It doesn’t happen often, but check the forecast on the day and have a fallback plan. The Bellagio also doesn’t publish the song schedule in advance, so confirm show times directly with the hotel if you want certainty.
Compared to Alternatives
Las Vegas is not short of ways to spend an evening, but most of the obvious options (Cirque shows, club nights, elaborate tasting-menu restaurants) either eat three hours on their own or lock you into one venue for the entire night. This itinerary gives you three distinct experiences across four hours, with a natural walking route that means no doubling back. Planet Hollywood sits between the Sphere and the Bellagio on or just off the Strip, so the logistical line is almost entirely linear.

Who Should Book This
Anyone attending CES 2027 who knows, realistically, that the show will consume most of their week. This is aimed at the person who lands with big plans for Las Vegas and leaves having seen almost none of it. If you’ve got one evening free, this is a practical way to use it without overcomplicating things. It works solo, it works if you’re with colleagues, and it works if you’ve brought a partner along for the trip. The Sphere in particular is something worth experiencing at least once, regardless of which show is running.

This isn’t a list of ten things you could do. It’s the one evening I’d actually tell you to book if CES has only left you the one. Dinner at Gordon Ramsay Burger to start, the Bellagio Fountains as a free interlude on the walk up the Strip, and then the Sphere to finish. Three things that fit inside four hours, cost two bookings, and leave you with something to actually remember from the trip.
